I really love your model, and can recall eating some of your first soup back at the original Ruta Maya. I too, started a gritty little South Austin business: Ruta Maya cigars and tobacco. Ruhlman's recipe calls for ZERO sodium nitrate...

Ruhlman's recipe calls for ZERO sodium nitrate (which is normally used in dry cured meats like salami). It calls for 8 tsp pink salt (42 grams) which is 6.25% sodium NITRITE mixed with salt and pink color and a pH buffer!!! Totally different and not OK the way you wrote this. You could hurt someone so you have a responsibility to get this stuff right.

I've often wondered if that structure was the small above-ground entrance to a vast underground sprawl. If it's not that, I suppose a really good soup and juice place is a great alternative. I really hope you could bring that scribbled drawing to life. That whole shopping center is really coming to life. Can't wait to walk from my house to here in a few minutes :)

Thanks for this elegant treatment, David. I enjoyed it thoroughly. I am gonna try the bread and half sours. I wish I knew a hunter who would give me all his tough, dry deer hams so I could have unlimited corned meat forever. I love that direction.
